Week 4 of seasonal eating meal plans is deeply rooted in the seasonal flavors of January including roasted root vegetables, elderberry chai tea, and a deeply satisfying Moroccan butternut squash soup.
Each week’s meal plan will be released on Sunday with our newsletter. It will include a shopping list and recommended recipes.
Along with the downloadable meal plans, I’ll explain any prep required to eat seasonally with ease each week of the year.

Week 4 of Seasonal Eating 2020 | January 26 – February 1
Such a blessing to have affordable, fresh, local, and mostly organic produce to complement my ever-dwindling pantry in January! Many of these items will be highlighted in week 5’s meal plan, but this arugula and microgreen mix were gone before this week’s end, like lightening!
I also started mung bean sprouts this week…finally! And, I am eager to get some of my own winter greens growing under lights this week. I don’t know how your week was, but mine was a series of mini-emergencies and petty dramas highlighted by a blown hot water heater!

Most weeks I’ll share my own shopping list. This week, however, we really dug deep into the foods we had on hand.
As for proteins, I signed up for Butcher Box because they were running an enticing special. The scallops and salmon in the seafood stew came from our first delivery. I am very happy with the product and plan on writing a review in the near future.
If you are curious, here’s my Butcher Box affiliate link. It gives you $30 off your first order!
