Week 7 Meal Plan | Simple February Meals
I won’t lie! February is one touch month for seasonal eating. The pantry stock is diminished, and wild edibles are not available. We rely a fair bit on sprouts and shoots, as well as the local farm-to-table grocery store.

I also added to my fermentation fridge using local cabbages, a quick and easy way to have side dishes available throughout the week. Click the image below to learn how to make sauerkraut that is oh so tasty and great for the immune system!

Here on our homestead in Harpers Ferry, WV, we enjoy a 4-season year that requires planning to provide seasonal ingredients during the winter months. You’ll see that February relies a great deal on our pantry items of preserved vegetables and fruits from last year’s harvests.
It’s a great way to live, and I wouldn’t change it for the world. As a matter of fact, this lifestyle left us pretty close to 100% prepared for lockdown last year when the pandemic emerged, and life came to a screeching halt!
